STUFFED MUSHROOMS WITH CRAB 
2 lb. medium portabella mushrooms, cleaned and stems removed

CRAB STUFFING:

1 or 2 cups crab meat, chopped (or imitation crab)
1 onion, chopped fine
2 cloves garlic, chopped fine
1/4 cup celery, chopped fine
1 1/2 cups seasoned bread crumbs, divided (Progresso or 4C)
2 tbsp. olive oil (or 1 tbsp. ea. butter and oil)
1 cup grated Swiss, jack or Mozzarella cheese
freshly ground pepper, to taste
1 tbsp. dill weed

Preheat oven to 350°F. Grease a casserole dish and set aside.

Heat oil in a skillet and sauté onion, garlic, celery and 1 cup bread crumbs. Remove from heat. Add crab meat and sprinkle with pepper and dill. Mix well.

Stuff mushrooms with mixture. Place in prepared dish and top with remaining bread crumbs and grated cheese.

Bake at 350°F for 20 minutes.
