CHICKEN OR TURKEY DISH 
8 slices bread, cubed
4 c. cooked meat
1/4 c. onion
1/2 c. green pepper
1/2 c. celery
1/2 c. mayonnaise
3/4 tsp. salt
2 eggs, beaten
1 1/2 c. milk or broth
1 can cream of mushroom soup
1/2 c. shredded cheese

Mix chopped vegetables, saute in butter or oil until tender, but not brown. Add meat, mayonnaise and seasoning. Butter two slices of bread and cut in 1/2" squares. Set aside. Cut remaining bread in 1" squares. Place one half of unbuttered cubes in 9"x13" baking dish. Spoon meat mixture over bread. Arrange remaining cubes over meat. Combine eggs, milk or broth and soup. Pour over all. Cover and chill 1 hour or overnight. Sprinkle with the buttered crumbs and top with cheese. Bake 1 hour at 325 degrees.
