ALMOND PUDDING 
1 tbsp. gelatin
1/4 c. cold water
1/2 c. hot water
1/2 c. sugar, caramelized
1 c. hot milk
1 c. cream, whipped
1/2 c. toasted, slivered almonds
1/2 tsp. vanilla

1. Soak gelatin in cold water for five minutes. Dissolve in hot water.

2. Mix caramelized sugar and hot milk. Add to gelatin mixture and chill until partially set. Beat until frothy.

3. Fold in whipped cream, almonds and vanilla. Chill. Serves 6.
