SWEET POTATO PIE | |
1/4 c. butter 2 (1 lb.) cans sweet potatoes or yams, drained 1 egg 1/2 c. milk 2 tbsp. brown sugar 2 tbsp. molasses 1/2 tsp. ground cinnamon 1/4 tsp. ground nutmeg Dash of ground cloves 1/2 c. miniature marshmallows (optional) Set power on high. In 1 1/2 quart casserole dish, heat butter 1 to 1 1/2 minutes or until melted. In medium bowl, combine butter, sweet potatoes, egg, milk, sugar, molasses, cinnamon, nutmeg and cloves; mash until smooth. Spread into casserole dish; cover with plastic wrap or lid. Set timer for 8 to 9 minutes or until heated through. If desired, top with marshmallows, heat uncovered 1/2 minute. |
