SWEET POTATO SPICE BARS 
2 c. sugar
1 c. vegetable oil
1 (16 oz.) can of sweet potatoes or drained yams
1 tsp. vanilla
2 c. all-purpose flour
2 tsp. baking powder
3/4 tsp. salt
1/2 tsp. ground allspice
1/2 c. golden raisins
1 tsp. grated orange rind
2 tsp. ground cinnamon
1 tsp. baking soda

Heat oven to 350 degrees. Grease jelly roll pan, 5 1/2 x 1/2 inch. Beat eggs, sugar, oil, vanilla and sweet potatoes. Stir in flour, baking powder, cinnamon, baking soda, salt and allspice. Mix in raisins and orange rind. Pour batter into pan. Bake until light brown, 25 to 30 minutes. Cool. Frost with cream cheese frosting. Sprinkle with nuts, cut into bars, 2 x 1 1/2 inches. Refrigerate until ready to serve. Yields about 48 bars.

CREAM CHEESE FROSTING:

1 (3 oz.) pkg. cream cheese, softened
1/4 c. plus 2 tbsp. butter
1 tsp. vanilla

Combine all ingredients together and beat by hand until smooth and of spreading consistency.
