SUPER SPINACH SALAD 
10 oz. fresh spinach, torn into bite-size pieces
1/2 tsp. salt
1/2 tsp. pepper
6 chopped hard boiled eggs
1/2 lb. cooked ham in strips
1 head lettuce, torn or chopped
1/2 tsp. each salt & pepper
10 oz. frozen peas, thawed
1 sliced red onion or green onion (3/4 c.)

DRESSING:

1 c. sour cream mixed with
1 c. mayonnaise

Layer salad in order given and pour dressing over top. Top with 8 ounces Swiss cheese in strips. Cover. Refrigerate. Sprinkle with cooked crisp bacon, crumbled, just before serving.
