PICKLED PICKEREL 
3 to 4 pickerel filled
3 tbsp. salt
1/4 c. sugar
1 med. onion, sliced
White vinegar
1 qt. jar
2 tsp. pickling spice

Cut cleaned fish into bite size chunks. Fill jar with fish 3/4 full. Add sugar, salt, onion and pickling spice. Fill jar with white vinegar until full and close tightly. Leave in refrigerator 4 days. After 2 days turn jar upside down.
