OAT BRAN MUFFINS 
2 1/4 c. oat bran cereal, uncooked
1/4 c. raisins
1/2 tsp. salt
1/3 c. honey or sugar substitute
2 tbsp. vegetable oil
1/4 c. chopped nuts
2 tsp. baking powder
3/4 c. skim milk
2 eggs, beaten

Preheat oven to 425 degrees. Grease 12 medium muffin cups with vegetable oil or paper baking cups. In large bowl combine oat bran cereal, nuts, raisins, baking powder and salt. Add remaining ingredients; mix just until dry ingredients are moistened. Fill muffin tins almost full. Bake 15-17 minutes or until golden brown. Yield: 12 muffins. One serving: 114 calories. Special note: Omit salt for low salt diet.
