CRAB AND FLOUNDER STUFFING 
1 c. chopped celery
1/2 c. chopped onion
1/2 c. chopped bell pepper
1 clove chopped garlic
Dash of hot sauce
2 tbsp. butter
1 lb. crabmeat
1/3 c. Parmesan cheese, grated
3/4 c. bread crumbs

Brown first 4 ingredients in butter. Mix crabmeat, cheese, bread crumbs, hot stuff, salt and pepper in large bowl. Add browned vegetables. Mix.

Make thick white sauce (3 tablespoons butter, 3 tablespoons flour and 1 cup milk.) Add white sauce to crab mixture. Mix well. This can be used to stuff crab shells, flounder, or just put in casserole and bake about 30 to 45 minutes.
