CRAB STUFFED PEPPERS 
1 c. crab meat
1 tsp. onion, minced
1 tsp. lemon juice
1 c. celery, finely chopped
3 to 4 green peppers
Safflower
Mayonnaise to moisten
3/4 c. lettuce, diced

Combine crab meat, onion, lemon juice and celery. Chill. Remove tops from green peppers. Hollow out inside. Just before serving, toss mayonnaise and lettuce with crab meat mixture. Spoon into green peppers.

Chicken or salmon may be substituted for crab. Tomatoes may be substituted for peppers.
