BEEF NOODLE CASSEROLES 
3 c. wide noodles
1 (4 oz.) pkg. dried beef
1 (10 oz.) pkg. frozen peas
2 tbsp. shortening
2 tbsp. flour
1 1/2 to 2 c. milk
1 c. buttered bread crumbs
White sauce
2 tbsp. butter
3/4 c. bread crumbs

While noodles are cooking in boiling, salted water (not more than 15 minutes). Make buttered bread crumbs. Melt 2 tablespoons butter in small saucepan, mix with bread crumbs. Set aside.

Make sauce, melt 2 tablespoons shortening in pan. Add 2 tablespoons flour. Let heat add 1 1/2 to 2 cups milk gradually. Stirring constantly until sauce is thick and creamy. Cut dried beef into small pieces.

Drain noodles and rinse. Layer noodles, beef, peas - sauce 3 times in casserole dish. Top with remaining sauce and sprinkle bread crumbs. Bake uncovered 30 minutes at 350 degrees.
