IRISH SODA BREAD 
4 c. flour
1/2 c. sugar
3 tsp. baking powder
1 tsp. salt
1/4 c. butter
1 tsp. baking soda
2 c. dark raisins
1 1/2 c. buttermilk or 1 tsp. vinegar to regular milk
2 eggs

Preheat oven to 375 degrees. Grease round iron frying pan or whatever you are going to use. Mix flour, sugar, baking powder and salt. Cut butter in until consistency resembles cornmeal. Add raisins. Meanwhile have milk mixture waiting. Add baking soda and eggs to milk. Pour wet mixture into dry ingredients and stir. It's messy, but turn this out onto a floured board, turning to coat. Shape into a ball and put into the pan. Cut an X into the top. Bake for 55 to 60 minutes. Cool 10 minutes. Turn out and serve hot or cold. Freezes well.
