JAMBALAYA 
1 lb. shrimp or chicken
1 lb. smoked sausage
1 stick butter
1/2 c. onion, chopped
1/4 c. green onions (shallots)
1/2 c. bell peppers, chopped
1/2 c. celery, chopped
1 can cream of mushroom soup
1 can Rotel tomatoes, diced
1 can French onion soup
2 tsp. salt
1 tbsp. Worcestershire sauce
1/3 c. parsley flakes
2 c. rice

Saute onions, shallots, bell pepper and celery in butter until wilted. Add meats, soups, salt, Worcestershire sauce. Bring to a slight boil. Remove from fire, then add parsley and rice. Pour into 9 x 13 inch pan. Cover tightly with foil. Bake at 325 degrees for 1 1/2 hours. (Stir after 30 minutes in oven and re-cover to continue baking.)
