1 lb. hot breakfast sausage 1 pkg. smoked sausage (split long roll and chop) Chicken breast (2 sm. boneless, cut up) 1/2 green bell pepper (depending on taste) and 1 lg. onion Hot sauce (to taste) Cajun or Creole Seasoning (probably at least 2 heaping tablespoons) Poultry seasoning (about 1 1/2 teaspoons) Garlic powder Black pepper 2-3 c. rice (depending on size of pan) Liquid for rice - 2 c. liquid for each cup of rice, includes 1 lg. can tomato sauce and water 1 sm. can tomato paste Brown meats together in skillet (starting with sausage), add garlic, black pepper, poultry seasoning. Remove from skillet leaving grease; add diced peppers, onions. Cook until start getting tender. Add Creole seasoning and poultry seasoning and stir in hot sauce to taste; remove from heat and stir in uncooked rice, coating with grease mixture. Put all ingredients in alrge pan (9 x 13 inch) stir together and add liquid (2 cups for each cup rice) and tomato paste. Cover with foil and bake for 1 hour - 1 hour and 20 minutes at 375 degrees stirring well halfway through cooking time. |
