SWEET POTATO SOUFFLE 
3 c. sweet potatoes, cooked and mashed
1 c. sugar
2 eggs
1/2 stick butter, melted
1 tsp. vanilla
1/2 c. milk

Mix potatoes, sugar, eggs, butter, vanilla and milk. Place in a greased casserole dish.

For Topping:

1 c. chopped pecans
1 c. light brown sugar
1/2 stick butter, melted
1/3 c. flour

Mix together pecans, brown sugar, melted butter and flour. Spread over potato mixture in casserole dish. Pat lightly; do not pack firm.

Bake for 35 minutes at 350°F.
