POLISH SWEET & SOUR CABBAGE 
Head of cabbage, sliced
2 tbsp. salt pork, chopped fine
1 to 2 tbsp. wine vinegar
1/2 tsp. brown sugar
Salt
Pepper

Slice salt pork, then chop fine to yield about 2 tablespoon pieces. Put into saucepan to brown lightly, keep stirring so it won't burn.

Add chopped cabbage, stirring occasionally to keep it coated with salt pork. Cook 1/2 hour - 3rd head (medium-low).

Add wine vinegar and brown sugar (which has been mixed together). Stir in well. Add salt and pepper to taste. Cook 15 minutes.

(Excellent with kielbasa added in!) Total cooking time: 45 minutes.
