2 c. flour
3 tsp. baking powder
3/4 tsp. salt
2 tbsp. sugar
3 eggs, separated
1 3/4 c. milk
1/2 c. oil

Sift flour, measure. Resift 3 times with baking powder, salt, and sugar. Beat egg whites until stiff peaks form. In large bowl beat egg yolks, milk and oil. Add flour mixture and beat until smooth. Fold in egg whites. Can be baked on waffle iron or a griddle for pancakes.
