2 med. potatoes, peeled & grated
4 eggs
1/2 c. milk
1 c. meat, chopped (ham, turkey, etc.)
1 c. frozen veggies
1 tbsp. minced onion
1 c. grated Co-Jack

Place shredded potatoes in bottom of 9"x9" pan. Mix together eggs, milk, meat, veggies, onion and pour over potatoes. Top with grated cheese. Bake 45 to 50 minutes at 350 degrees. Cool 10 minutes before cutting.
