CHINESE CUCUMBERS 
2 lg. cucumbers, peeled, cut in half lengthwise, scoop out seeds, slice each half in half & slice into strips 2 inches long & 1/2 inch thick
1 tsp. salt
3 scallions, slivered lengthwise & cut into 2 inch strips
2 cloves garlic, minced (less if you prefer)
1 1/2 tbsp. soy sauce
1/2 tsp. sesame oil
1 tsp. vinegar
1/4 tsp. sugar
1/2 tsp. pepper
Optional: 1/4 tsp. hot pepper flakes or hot pepper oil

Place cut cucumbers into bowl. Sprinkle with salt and let sweat for 15 minutes. Squeeze out cucumbers on paper towel to remove excess water. Return to dry bowl and add scallions, garlic and other ingredients. Mix well. Refrigerate to chill.
