BEANS & RICE SALAD 
1 (15 oz.) can black beans, drained
1/4 c. Italian dressing
1/4 tsp. pepper
3/4 c. long grained rice, uncooked
1/4 c. Italian dressing
Lettuce leaves
3/4 c. shredded cheddar cheese
3 green onions, thinly sliced
1 med. tomato, chopped
Sour cream (opt.)

Combine first 3 ingredients, cover and chill at least 8 hours. Cook rice according to directions. Rinse with cold water, drain. Combine rice and 1/4 cup Italian dressing; stir well. Chill at least 8 hours.

Spoon rice onto individual lettuce lined plates. Spoon bean mixture over rice. Top with cheese, green onions, tomato and sour cream. 4 servings.
