RICE - BEAN SALAD | |
1 c. cooked rice (may use brown rice) 1 (1 lb.) can kidney beans, drained 2 hard cooked eggs, chopped, if desired 1/2 c. chopped sweet pickles 1/4 c. chopped onion 1/4 c. chopped celery 1/4 c. chopped green pepper 1/2 tsp. salt 1/4 tsp. pepper 1/3 c. mayonnaise or salad dressing Combine all ingredients. Chill. Serve on lettuce or greens. Makes 6-8 servings. Note: For the best flavor, combine ingredients while rice is hot. |
