“ZOMBIE EYEBALLS” IS IN:

ZOMBIE EYEBALLS 
Perfect for Halloween hors d'oeurve. You can even freeze them ahead and bake them in small batches. We like to use Jalapeno Jack cheese, as it's flecks of red and green peppers add a ghoulish visual effect!

4 tbsp. (1/2 stick) butter, softened
8 oz. grated cheddar or Monterey jack cheese
1 cup all-purpose flour
1 tsp. paprika
1/2 tsp. Salt
24 small stuffed olives (or so)

Preheat oven to 400°F. Leave the butter out until soft.

Combine butter with grated cheese in a mixing bowl until well blended.

In a different bowl, mix flour, paprika, and salt. Combine both mixtures until completely blended together.

Teaspoon by teaspoon, form "eyeballs" around the olives. Place them on ungreased baking sheets.

Bake at 400°F for 12 to 15 minutes.

Makes about 2 dozen "eyeballs".
