PEAR UPSIDE DOWN CAKE 
3 tbsp. butter
3/4 cup packed brown sugar
3 or 4 pear halves sliced length-wise (canned)
5 maraschino cherries (optional)
1/3 cup shortening
1 egg
1 1/4 cups flour
1 tsp. baking soda
1 tsp. cinnamon
1 tsp. ginger
1/4 tsp. cloves
1/4 tsp. salt
1/2 cup light molasses,
1/2 cup boiling water

Melt butter in an 8-inch square pan. Add 1/4 cup of the brown sugar. Arrange pears and cherries over sugar mixture. Cream shortening and remaining sugar; add the egg mix well. Add flour, baking soda, cinnamon, ginger, cloves and salt. Combine molasses and water; add alternating with dry ingredients to make a creamy mixture. Spread over pears.

Bake at 350°F 45 to 50 minutes Or until done. Cool 5 minutes, then turn out onto dish and serve with whipped cream.

What a wonderful treat. We made this cake on a whim and we were very pleased with it ! It is ginger like bread not a cake mix but still easy to prepare. The other thing we liked is that is not overly sweet! It's so good we are bring it to the superbowl party to share, 5 ***** ;)

I've made this a lot of times and all reviews are "just the bomb"! At work I'm requested to make this for early morning meeting ;) It is great with coffee! I have made it with pears or mulberries or pineapple or a combo. As I said before it's not too sweet.
