PLAIN MUFFINS 
2 c. sifted flour
2 tbsp. sugar
3 tsp. baking powder
1 tsp. salt
1 c. milk
1 egg, beaten
3 tbsp. melted shortening

Sift dry ingredients together. Combine milk and egg. Pour liquid ingredients into dry ingredients. Stir only until flour is moistened. Stir in melted shortening. Fill muffin pans 2/3 full. Bake at 425 degrees for 20 minutes. Makes 12 muffins.
