PLAIN MUFFINS 
2 c. sifted flour
3 tbsp. sugar
3 tsp. baking powder
1/2 tsp. salt
1 c. skim milk
1 carton (1/2 c.) Morningstar Farms Scramblers
1/3 c. polyunsaturated oil

Combine and sift flour, sugar, baking powder, and salt into a bowl. Combine milk, Scramblers, and oil; beat with rotary beater until well mixed. Make a well in center of dry ingredients; pour liquids into well. Stir just until dry ingredients are moistened. DO NOT OVERMIX!

Fill butter-coated 2 1/2-inch muffin cups 2/3 full. Bake at 400 degrees for 20 minutes, until done. Remove from cups. Serve hot. Yield 10-12 medium-size muffins.
