PLAIN MUFFINS 
1/4 c. cooking oil
2 c. sifted flour
1 tbsp. baking powder
1/4 c. sugar
1/2 tsp. salt
1 egg, well beaten
1 c. milk

1. Preheat oven to 400 degrees. Grease bottoms of muffin cups only. 2. Sift together the sifted flour, baking powder, sugar and salt into a large mixing bowl. 3. Beat egg in small bowl with rotary beater and add milk and shortening to beaten egg. Mix well. 4. Make a well in the center of the sifted dry ingredients. 5. Add milk mixture all at once to the dry ingredients. 6. Stir quickly with a fork only until the dry ingredients are wet. 7. DO NOT OVERMIX. The batter should be lumpy. NEVER BEAT. 8. Spoon batter into greased muffin cups, filling 2/3 full. 9. Bake 20 to 25 minutes. Makes 12 muffins.
