FRESH APPLE CAKE 
2 c. all-purpose flour
2 c. sugar
2 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. nutmeg
1/2 tsp. salt
4 c. diced raw apples, peeled
1/2 c. chopped walnuts
1/2 c. (1 stick) butter, melted
2 eggs
confectioners' sugar, for sprinkling

Preheat oven to 325°F. Grease 9x13x2-inch baking dish. In a large bowl, sift flour, sugar, baking soda, cinnamon, nutmeg and salt. Add apples, nuts, butter and slightly beaten eggs. This will be a thick mixture. Mix well.

Pour into baking dish. Bake 1 hour to 1 hour 15 minutes until cake springs back to touch. Cool slightly and sprinkle with confectioners' sugar. Serve warm or cold with whipped cream or ice cream.
