RIB ROAST SUPREME 
5 lb. rib roast
2 tsp. salt
2 tsp. rosemary
1 1/2 tsp. oregano
1 1/2 tsp. thyme
1 1/2 tsp. sage
1/4 tsp. pepper
1/4 tsp. nutmeg
1 c. thin sliced onion
1 c. thin sliced carrots

Cut 1/2 inch slits across top of roast. Press 1/2 the seasonings (that have been mixed together) into the slits and spread the other 1/2 of mixture across the surface of the meat.

Put the roast in a shallow baking pan, scatter onions and carrots around the roast. Bake at 325 degrees for 3 hours.
