2 c. flour (sifted)
1/2 tsp. baking powder
3/4 tsp. baking soda
1/2 tsp. salt
1/4 c. sour milk or buttermilk
1 c. mashed bananas
1/2 c. butter (1/4 lb.)
1 1/2 c. sugar
2 eggs
1 tsp. vanilla
Add 1/8 c. more flour for foundation

Sift flour, baking powder, soda and salt together. Add milk to mashed bananas. Cream butter and sugar. Add eggs and mix well. Add dry ingredients, alternately with banana-milk mixture. Stir in flavoring and pour in greased layer pans. Bake at 350 degrees for 30 minutes. May be served with whipped cream and sliced bananas or ice with maple icing, best is plain 10x sugar icing.
