BANANA CAKE WITH BANANA FROSTING | |
2 1/2 c. flour 1 1/3 c. sugar 1 1/4 tsp. baking soda 1 tsp. vanilla 1/2 c. shortening 2 eggs 1/2 c. buttermilk or sour milk (add 1 tbsp. vinegar to milk) 2 very ripe banana Optional: 1/2 c. chopped nuts Or 1/2 c. currants or raisins Combine all ingredients and mix well for 2 minutes. Pour in greased and floured 9 x 13 inch pan. Bake for 35 minutes at 350 degrees. FROSTING: 1/2 c. butter 1 very ripe banana 1 tsp. lemon juice 1/2 tsp. vanilla 3 c. powdered sugar Milk Combine butter, banana, juice and vanilla. Blend in powdered sugar. Add milk if necessary for good spreading consistency. |
