CHICKEN KABOBS | |
2 lbs. boneless, skinless chicken breasts 1/2 c. vegetable oil 1/4 c. lemon juice 1 tsp. dried rosemary or tarragon 1 tsp. salt 1 clove garlic, minced 1/4 tsp. white pepper 15-20 scallions, cut into 1 inch pieces Cut chicken breasts into 1 inch pieces. Combine oil, juice, herbs and garlic; toss with chicken. Marinate 30 minutes or longer. Skewer chicken pieces alternately with scallions. Grill 6 inches from medium hot coals for 6-8 minutes. Serves 8. |
