BATTER DIPPED CHICKEN 
1 egg yolk
1/4 c. milk
1 tbsp. melted butter
1/2 c. flour
1/4 c. more milk
1/4 tsp. salt
1 egg white

Beat egg yolk, add milk, melted butter, and flour. Blend. Add more milk and salt. Beat egg white until stiff. Fold into above mixture. Enough for 2 chicken breast. Use cooked white meat (stewed, boiled). Dip chicken pieces in batter. Cook in butter on low medium heat turning once.
