APPLE PIE 
4 lg. Golden Delicious
3 lg. Granny Smith
1/4 c. apple juice
2 tbsp. lemon juice
1/2 c. sugar
1/2 light brown sugar
2 tbsp. plus 1 1/2 tsp. tapioca
1 tsp. vanilla
3/4 tsp. cinnamon
1/2 tsp. nutmeg

In a large saucepan, cook apple slices, apple juice, and lemon juice 5 to 10 minutes, stirring constantly, until apples are slightly limp. Remove apples to large bowl, stir in remaining ingredients. Refrigerate filling, uncovered, until cool. Place filling into regular pie crust. Bake in 400 degree oven. Turn oven to 350 degrees, bake 50 to 60 minutes.
