GOLDEN CHEESE AND RICE 
2 c. cooked rice
2 c. shredded carrots
2 c. cubed Velveeta cheese
2 beaten eggs
2 tbsp. minced onion
1/2 c. milk

Combine all ingredients, reserving 1/2 cup cheese. Pour into a 2- quart greased casserole dish. Sprinkle with remaining 1/2 cup cheese. Bake in 350 degree oven for 35-40 minutes. Delicious!
