BAGELS 
1 c. lukewarm water
2 tbsp. sugar
1 1/4 tsp. salt
1 egg (reserve half of egg white for wash)
1 pkg. yeast
3 1/2-4 c. flour
2 tbsp. sugar

Place first 5 ingredients in a mixing bowl, add 1 cup of flour and beat for 2 minutes with electric beater. Gradually add balance of flour, stirring by hand until the dough no longer sticks to the sides of the bowl.

Place dough on a floured surface and knead 7-8 minutes. Then put in an ungreased bowl. Cover and let rise for 30 minutes. Cut dough into 12 pieces, form each piece into a ball and with your finger tip punch a hole in the center. Gradually enlarge the hole, shaping it to look like a donut. Place rings on a lightly floured board; cover and let rise for 20 minutes.

Put 2 inches of water in a large saucepan or electric frying pan, add 2 tablespoons of sugar and bring to a boil. Drop rings gently into boiling water. Do not crowd. Boil for 3 minutes on each side and drain on paper towels. After draining, place on a greased cookie sheet, brush with a mixture of 1 teaspoon water and the reserved egg white. Bake at 400 degrees for 25 minutes or until golden brown.
