1 c. milk Scald. 1 1/2 tbsp. sugar 1/2 tsp. salt Add to milk and let mixture cool until lukewarm. Add to lukewarm mixture. Beat white well and add. 1/4 c. wheat germ Add and mix well. Knead on a floured board. Cover and let rise about one hour. Roll out in small pieces, finger width and two fingers long. Shape into rings, pinching ends together well. Let stand on floured board only until they begin to rise, about 10 minutes. Drop bagels, one at a time, into a pan of hot water, just under boiling. Cook on each side approximately one minute. Place on a baking sheet. Beat water with the reserved egg yolk. Brush on bagels. Bake at 400 degrees about 20 minutes. Makes 1 dozen. |
