LATKES 
4 lg. potatoes
1 med. onion
1 tsp. salt
1 egg, well beaten
3 tbsp. flour
1/2 tsp. baking powder
Vegetable oil for frying

1. Grate peeled potatoes and onion, add salt, egg, flour and baking powder. Mix all together until smooth.

2. Heat oil in large frying pan. Carefully drop potato mixture by spoonfuls and fry, turning when well browned.

3. Drain Latkes on paper towel. Serve with applesauce.

4. Makes 24 potato Latkes.
