POTATO LATKES OR KUGEL | |
2 lb. Idaho potatoes 1 onion, grated 4 eggs 4 tbsp. matzo meal 1 tsp. salt 1 tsp. baking powder Dash pepper Grate potatoes, drain the extra liquid by squeezing with a food-grade paper towel or clean kitchen towel. Mix well with other ingredients. Heat oil in a large pan, about 4 tablespoons, over medium heat. Use spoonfuls of the mixture. Fry like pancakes on both sides. Or if you want to make a kugel, bake in a greased 8 inch square pan at 350°F for 35 minutes until the top is brown. |
