POTATO LATKES | |
1 vitamin C tablet 2 1/2 lb. potatoes (or 4 lg. potatoes) 2 eggs, lightly beaten 1 tsp. salt 1/4 tsp. baking powder 2 tbsp. matzoh meal Vegetable oil Place vitamin C tablet in small bowl and 2 tablespoons water to dissolve. This will keep the potatoes from discoloring and make the latkes stay golden in color. Shred the peeled potatoes by hand or using the shredding blade of a food processor. Shred or finely chop the onion and add to the potatoes. Add eggs, salt, baking powder and matzoh meal. Mix well. In a heavy skillet, heat 1/2 inch of oil on medium high. Using a slotted spoon, transfer 2 tablespoons batter to the hot oil, using the back of the spoon, flatten slightly and fry on both sides. Drain on paper towel. May be served immediately or reheated at 350 degrees for approximately 10 minutes. They may be frozen and reheated. Serve with sour cream and/or applesauce. |
