KEITH'S BASIC ROASTED PECANS 
4 c. pecan halves
4 tbsp. butter
1 tbsp. salt

Spread pecans in heavy baking pan and bake 30 minutes at 325 degrees. Add butter and stir well until all pecans are coated. Bake 15 minutes more, sprinkle with salt and stir well. Bake 15 to 20 minutes more, then remove from oven. Stir well and let cool. Total cooking time should be from one hour to one hour 15 minutes.

If I had roasted the pecans for the full hour they would have been burned. After half an hour I decreased the temperature to 250°F for another 15 minutes, then took them out to cool. They are still not as tasty as premium pecans should be. I'll look for a different recipe next time.

My kind of recipe! The grocery store substituted roasted pecans in my order and for the first time in 40 years I can eat pecans without making my mouth raw. Now I can roast them at home.
