CHEDDARED POTATOES 
3 med. size potatoes, diced
1 c. shredded cheddar cheese
2 tbsp. melted butter
1/2 c. sour cream (room temperature)
1 tbsp. instant onion or 2 1/2 tbsp. chopped green onion
1/2 tsp. salt
1/4 tsp. pepper
1/2 c. bread crumbs, browned in melted butter

Cook potatoes in small amount of water until tender. Drain and mix with cheese, melted butter, sour cream, onion, and seasoning. Put in greased 1-quart casserole and cover with browned bread crumbs. Bake 25 minutes or until heated through at 350 degrees. Serves 3-4.
