SKILLET PUDDING 
1 c. firmly packed brown sugar
2 c. boiling water
6 tbsp. butter
1 1/2 tsp. vanilla extract
1/2 c. sugar
1/2 c. milk
1 c. all purpose flour
1 tsp. baking powder
1/2 tsp. salt
1/2 c. raisins

Combine brown sugar, water, 2 tablespoons butter and 1 teaspoon vanilla in a 10" skillet.

Combine sugar and remaining butter in a mixing bowl, creaming well. Blend in milk. Stir or sift flour with baking powder and salt; stir into milk mixture. Add vanilla and raisins. Spoon this batter over the original brown sugar mixture in the skillet. Bake at 350 degrees for 25 minutes.

Best served warm and is delicious with whipping cream poured over.
