HAWAIIAN SWEET POTATOES | |
3 med. size sweet potatoes 2/3 c. brown sugar, packed 1 tsp. salt 3 tbsp. butter 3 bananas, peeled and sliced 1/2 c. orange juice 1/4 c. coconut Cook potatoes in boiling water to cover about 25 minutes or until tender but firm. Cool, cut in 1/4 inch slices. Heat oven to 350. Layer potatoes in casserole. Sprinkle with sugar mixed with salt. Dot with butter. Top with bananas. Repeat in layers until used up. Pour on orange juice. Sprinkle with orange juice until all juice is used. Sprinkle coconut on top. Bake 20 minutes or until top is brown. |
