BRUNSWICK STEW | |
5 lbs. potatoes, peeled 3 lbs. stew beef 3 lbs. chicken 3 lbs. pork 3 lb. can lima beans or butter beans 3 lb. can cream corn 2 lg. pkgs. okra 2 lg. cans tomato sauce 3 lb. can crushed tomatoes Cayenne pepper Salt and pepper Boil stew beef, chicken and pork together until chicken and pork is cooked enough to debone. Put aside until cool enough to take chicken and pork off of bones. DO NOT throw the water away! Put the deboned chicken and pork and the stew beef in a blender and shred the meat. After shredded the meat, put that and the lima beans, cream corn, okra, tomato sauce and crushed tomatoes in the large pot with the meat. Put in 1/4 cup cayenne pepper, 1/4 cup salt and 1/4 cup pepper; stir until blended. Set aside. In a separate pot of water, place the peeled potatoes in the pot of water and boil them until they are soft enough to mash. After mashing the potatoes, put them in the other pot with the meat, etc. Simmer for 4 hours, adding water as needed. Feeds 15-20 people. |
