2 c. chopped zucchini
1 c. chopped tomato
1/2 c. chopped onion
1/3 c. grated Parmesan cheese
1 1/2 c. milk
3/4 c. Bisquick
3 eggs
1/2 tsp. salt
1/4 tsp. pepper

Heat oven to 400 degrees. Lightly grease 10 inch pie plate. Sprinkle zucchini, tomato, onion and cheese in pie plate. Beat remaining ingredients until smooth (blender or hand mixer). Pour into pie plate. Bake until golden brown and knife inserted in the center comes out clean, 30 minutes. Let stand 5 minutes. Note: 9 inch pie plate use only 1 cup milk, 1/2 cup Bisquick and 2 eggs.
