CARROT PANCAKES 
4 carrots, shredded very fine
1 1/2 c. milk
2 eggs
2 tbsp. oil
1 1/3 c. flour
2/3 c. whole wheat flour
2 tbsp. sugar
4 tsp. baking powder
1/2 tsp. salt
2 tbsp. oat bran

Place shredded carrots in boiling water until tender (3-5 minutes); drain well. In bowl, blend milk, eggs and oil. Add carrots and dry ingredients, mix thoroughly. Cook on griddle until golden brown.
