SCALLOPED POTATOES FOR FIFTY 
9 qts. thinly sliced pared potatoes
3/4 c. all-purpose flour
2 1/4 c. butter
4 tbsp. salt
1 1/2 tsp. pepper
3 qts. hot milk

Heat oven to 325 degrees. Arrange potatoes in layers in baking pans; sprinkle flour over each layer. Pour over hot milk, butter and seasoning. Fill pans 2/3 full.
