ROMAINE AND AVOCADO SALAD 
1 lg. head Romaine, break leaves
1 avocado, diced

Mix the above in a salad bowl. Add 3 tablespoons good olive oil. Mix and let stand 10 minutes.

Add: 1 1/2 tbsp. vinegar Salt to taste

Sprinkle with 4 tablespoons freshly grated Parmesan cheese. Serve immediately.
