ROMAINE SALAD WITH CASHEWS 
3 heads romaine, washed broken into bite size pieces
1 c. salted cashews
1/2 c. thinly sliced sweet red onion
1/2 c. chick peas

DRESSING:

1/4 c. cider vinegar
1 heaping tbsp. Dijon mustard
Pinch ground cumin
Pinch ground cardamon
Salt and fresh ground pepper to taste

Just before serving, stir dressing and toss into salad. Enjoy.
