CARROT, CASHEW, CELERY SALAD 
3 to 4 med. carrots, peeled and grated
2 stalks celery, diced
1/2 c. roasted cashews
Handful alfalfa sprouts

Combine all ingredients in bowl. In a separate bowl, mix together dressing:

3 tbsp. safflower oil
1 tbsp. tamari or soy sauce
2 1/2 tsp. curry powder
1 lg. clove garlic, crushed
1 tsp. Dijon mustard

Pour over vegetables, toss and chill.
